Simple Chicken Consomè

Materials
- 1 pierna de pollo (leg and thigh), skin removed
- 1/2 lb chicken gizzards (I use hearts and lungs)
- 2 medium red potatoes, peeled and cut in chunks
- 1 medium red onion
- 4 cloves garlic
- 1 stalk celery
- 1 small carrot
- 1 large handful swiss chard (or spinach)
- 1/2 cup red pepper, chopped
- salt (to taste)
- 8 cups water
- green onion, chopped (optional)
- fresh cilantro, chopped (optional)
- avocado, chopped (optional)
Instructions
- Fill soup pot with 1/2 of the water and salt (start with 1 tsp).
- Add chicken (skin removed), gizzards, and potatoes and bring to a simmer….keep pot covered. Simmer for 45 minutes.
- While soup is simmering, cut all remaining vegetables.
- Blend vegetables with the remaining water. If using a Nutribullet, it will need to be done in two separate batches.
- Add to chicken and potatoes and bring back to a simmer for an additional 15 minutes.
- Add more salt, to taste, if needed.
- Top with chopped green onion, cilantro, and avocado.
Notes
This can easily be adapted to a slow cooker. Put the chicken and potatoes in the slow cooker with the water and salt on low heat. Cook for 4-6 hours and add the blended vegetables for the last hour.
You can also add the vegetables chopped, if you prefer. But if you have kids who don’t like vegetables, or you want to keep it super simple, the blender is a great and easy way to get those vegetables into the meal without all the work…..or fuss from picky eaters.
