Fill soup pot with 1/2 of the water and salt (start with 1 tsp).
Add chicken (skin removed), gizzards, and potatoes and bring to a simmer....keep pot covered. Simmer for 45 minutes.
While soup is simmering, cut all remaining vegetables.
Blend vegetables with the remaining water. If using a Nutribullet, it will need to be done in two separate batches.
Add to chicken and potatoes and bring back to a simmer for an additional 15 minutes.
Add more salt, to taste, if needed.
Top with chopped green onion, cilantro, and avocado.
