Protein Banana Muffins
lower carb, no sugar added
Yield: 6 muffins
Materials
- 1/2 cup mashed very ripe banana
- 2 eggs
- 1/4 cup milk of choice
- 1/4 cup oat flour
- 1/4 cup coconut flour
- 1/4 cup protein powder**
- 2 Tbsp mesquite powder (lucuma would work also)
- 2 Tbsp coconut oil
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup chopped nuts (optional)*
Instructions
- In small bowl, mash banana with a fork.
- Add in the egg, milk, and coconut oil and stir.
- In a medium bowl, mix all dry ingredients together.
- Pour the wet mixture into the dry mixture and mix well by hand.
- Spoon the mixture into a six cup muffin tin evenly that is lightly greased with coconut oil.
- Bake at 190*C for 30-40 minutes until it passes the toothpick test.
Notes
*I used my Coconut & Friends mixture in this and they came out really delicious. But, since the walnuts and cashews in the mix are whole and large, I only scooped out the coconut and pumpkin seeds. But you can use any chopped nuts, cacao nibs, or shredded coconut and all would be great.
Recipe can easily be doubled if you have a 12 cup muffin tin.
**If you do not want to use protein powder, or don’t have any, simply add another 1/8 cup coconut flour and another 1/8 cup oat flour in lieu of it.
