Blueberry Coconut Superfood Pancake

Materials
- 1/8 cup coconut flour
- 1/8 cup oat flour
- 1/2 mashed banana
- 1 egg
- 1/8 tsp baking powder
- 1 Tbsp Lucuma Powder
- 1 small handful blueberries
Instructions
- In a small bowl, mash the banana.
- Add egg and mix well.
- Add remaining ingredients, except blueberries, and mix.
- Add blueberries and stir just until mixed in.
- Sautee in non-stick pan with a little butter or oil until cooked through, flipping half way through.
