Superfood Plantain Loaf with Chocolate Bark
Yield: 10 slices
Materials
- 1 cup oat flour
- 1/4 cup Maca Powder
- 1/4 cup Lucuma Powder
- 1 plantain, very ripe, mashed
- 2 eggs
- 1/4 cup Coconut Oil
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup chocolate bark*, chopped (or chips)
Instructions
- In a medium bowl, mix all dry ingredients.
- In a small bowl, mash plantain with a fork until there are no large chunks left. Add in the eggs and coconut oil and mix well.
- Pour the wet mixture into the bowl with the powders and mix well by hand.
- Chop chocolate bark and fold into the above mixture.
- Pour batter into a 9" x 5" loaf pan lightly greased with coconut oil.
- Bake at 190*C for 30-45 minutes until it passes the toothpick test.

If you want this a little bit sweeter, you can use 1/2 cup of Lucuma Powder and omit the Maca Powder.
