Superfood Plantain Loaf with Chocolate Bark

Materials

  • 1 cup oat flour
  • 1/4 cup Maca Powder
  • 1/4 cup Lucuma Powder
  • 1 plantain, very ripe, mashed
  • 2 eggs
  • 1/4 cup Coconut Oil
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup chocolate bark*, chopped (or chips)

Instructions

  • In a medium bowl, mix all dry ingredients.
  • In a small bowl, mash plantain with a fork until there are no large chunks left. Add in the eggs and coconut oil and mix well.
  • Pour the wet mixture into the bowl with the powders and mix well by hand.
  • Chop chocolate bark and fold into the above mixture.
  • Pour batter into a 9" x 5" loaf pan lightly greased with coconut oil.
  • Bake at 190*C for 30-45 minutes until it passes the toothpick test.

If you want this a little bit sweeter, you can use 1/2 cup of Lucuma Powder and omit the Maca Powder.
