In a small bowl, mash plantain with a fork until there are no large chunks left. Add in the eggs and coconut oil and mix well.
Pour the wet mixture into the bowl with the powders and mix well by hand.
Chop chocolate bark and fold into the above mixture.
Pour batter into a 9" x 5" loaf pan lightly greased with coconut oil.
Bake at 190*C for 30-45 minutes until it passes the toothpick test.
