Plantain Lucuma Waffles

Yield: 6 waffles

Materials

  • 1 cup oat flour
  • 2 Tbsp Lucuma Powder
  • 1 1/2 tsp baking powder
  • 1 pinch salt
  • 1 ripe plantain, mashed
  • 2 eggs
  • 1/4 cup milk of choice
  • 4 Tbsp coconut oil

Instructions

  • Add all dry ingredients in a medium bowl and set asdie.
  • Mash plantain with a fork in a small bowl.
  • Add other wet ingredients and mix together.
  • Pour wet ingredients into dry and mix well, by hand.
  • Scoop out batter and pour appropriate amount onto waffle iron (depends on size).
  • Serve immediately with maple syrup, if desired; store leftovers in the refrigerator or freezer.
