Black Bean and Corn Salsa
Great side dish for dipping or to sever with meat
Yield: 6
Materials
- 1 1/2 cups black beans
- 1 1/2 cups corn
- 1 large tomato, chopped
- 1 small avocado, chopped
- 1 medium red onion, diced
- 1/4 cup cilantro, chopped
- 1/2 lime, juiced
- 1 tbsp jalapeño, diced (optional)
- 1/2 tsp salt
Instructions
- Mix all ingredients in a large bowl.
- Chill for at least one hour to let all flavors mix before serving.
Notes
If you want to keep this healthy and not serve it with tortilla chips, try it with psyllium husk flatbreads instead. They’re delicious and packed with fiber so the net carbs are super low!!! I love to serve this with some grilled chicken and it’s delicious just like that. It could go also with steak, pork, or fish as well.
