Single Serve Banana Pancake

Materials

  • 1 banana
  • 1 egg
  • 1/2 cup oatmeal
  • 1/8 tsp cinnamon (optional)
  • oil/butter (for pan)

Instructions

  • In a small bowl, mash 1/2 of the banana. Reserve other 1/2 whole.
  • Add egg and oatmeal and mix well.
  • Allow mixture to sit for two minutes so that the oatmeal can absorb some moisture.
  • If not using a non-stick pan, add oil or butter to pan and turn on low heat.
  • Add pancake mixture and cook 2-3 minutes on each side.
  • Remove panckake from pan and, using reminaing 1/2 banana, top with banana slices.
