Single Serve Banana Pancake
The Healthy Pancake

Materials
- 1 banana
- 1 egg
- 1/2 cup oatmeal
- 1/8 tsp cinnamon (optional)
- oil/butter (for pan)
Instructions
- In a small bowl, mash 1/2 of the banana. Reserve other 1/2 whole.
- Add egg and oatmeal and mix well.
- Allow mixture to sit for two minutes so that the oatmeal can absorb some moisture.
- If not using a non-stick pan, add oil or butter to pan and turn on low heat.
- Add pancake mixture and cook 2-3 minutes on each side.
- Remove panckake from pan and, using reminaing 1/2 banana, top with banana slices.
