Seafood Quinoa Paella
The Healthy Seafood Paella

Materials
- 1 small yellow onion, finely chopped
- 1 medium tomato, finely chopped
- 1 small bell pepper, finely chopped
- 4 cloves garlic, finely chopped
- 3 tbsp olive oil
- 1/2 cup quinoa
- 1 lb shrimp, peeled and deveined
- 1 lb muscles or clams, rinsed and scrubbed
- 1/4 tsp salt
- 1 tbsp parsley, chopped
- 2 cups water
- 1 lemon, sliced (optional)
Instructions
- In medium size pot over medium heat, sautee the onion and garlic in the olive oil until fragrant, about three minutes.
- Add in red bell pepper and sautee another three minutes.
- Add in the tomato and salt and sautee until tomato is well broken down.
- Once the above mixture is broken down well, add in the water and quinoa and bring to a simmer.
- After quinoa has simmered for 10 minutes, add in the seafood and simmer for another 5-10 minutes until all of the water is absorbed.
- Serve over a bed of swiss chard or spinach and garnish with parsley and a squeeze of lemon, if desired.
Notes
You can substitute other types of fish or seafood, if preferred. If using fish, make sure to use on that is not flaky and has more of a solid meat so it doesn’t all fall apart in the pot.
I did not use saffron in this recipe because it is not readily available here in Colombia. But if you have access to it, feel free to add in a pinch of that as well.
