Lavender Lime Confections
lightly lavender flavored almond flour cookies
Yield: 12 cookies
Materials
- 1 1/2 cups almond flour
- 1 tsp lavender flowers, finely chopped
- 1/4 tsp baking soda
- 1/8 tsp salt
- 2 1/2 Tbsp coconut oil
- 1 Tbsp lime juice
- 1 Tbsp lime zest
Instructions
- Mix all dry ingredients in a medium bowl.
- Mix all wet ingredients in a small bowl.
- Pour the wet ingredients into the dry and stir, by hand, until combined thoroughly and a dough forms.
- Divide dough into 12 equal pieces and form into round balls and then flatten to desired thickness.
- Place on a prepared cookie sheet, or parchment paper, and bake at 175*C for 15-20 minutes depending on how firm you prefer your cookies.
- Serve chilled or at room temperature.
Notes
These cookies can be made very thin and will come out more crunchy if you prefer. Or, if you like a softer, chewy cookie, simply form them a bit thicker before placing them in the oven.
I prefer these served chilled so I keep them in the refrigerator. I do not like them warm, as I do most other cookies.
