Chocolate Chip Granola Bars

Superfood Chocolate Chip Granola Bars

healthy, delicious, and easy when on the go

Materials

  • 1 cup oatmeal
  • 1 ripe banana
  • 1/2 cup Coconut & Friends Trail Mix*
  • 2 Medjool Dates, chopped (more to taste)
  • 1 Tbsp Pure Maple Syrup (more to taste)
  • 1 Tbsp Maca Powder
  • 1/2 tsp cinnamon
  • 1/2 tsp pure vanilla extract
  • 1/4 cup milk of choice
  • 1/4 cup chocolate chips

Instructions

  • Preheat oven to 175*C
  • Place all ingredients, except the milk and chocolate chips, into a high power food processor and blend on low until all ingredients are mixed well and there are no large chunks left.
  • Add in milk and blend again just until mixed.
  • Place batter into a bowl and mix in the chocolate chips by hand.
  • Dump the batter into a 8"x8" baking pan, lined with parchment paper. Spread the batter evenly in the pan. The batter will be fairly thick.
  • Bake for approximately 30 minutes.
  • Remove, and once cooled, cut into desired sized squares.

Notes

*Coconut & Friends Trail Mix is a product that I carry that contains walnuts, cashews, pumpkin seeds, and coconut chips. 
These are more like a granola bar than a dessert. If you prefer something with a bit more sweetness, just add another couple of dates, or a little bit more maple syrup and you’ll still have a pretty healthy dessert to enjoy!
