Superfood Chocolate Chip Granola Bars
healthy, delicious, and easy when on the go

Yield: 9 squares
- 1 cup oatmeal
- 1 ripe banana
- 1/2 cup Coconut & Friends Trail Mix*
- 2 Medjool Dates, chopped (more to taste)
- 1 Tbsp Pure Maple Syrup (more to taste)
- 1 Tbsp Maca Powder
- 1/2 tsp cinnamon
- 1/2 tsp pure vanilla extract
- 1/4 cup milk of choice
- 1/4 cup chocolate chips
Preheat oven to 175*C
Place all ingredients, except the milk and chocolate chips, into a high power food processor and blend on low until all ingredients are mixed well and there are no large chunks left.
Add in milk and blend again just until mixed.
Place batter into a bowl and mix in the chocolate chips by hand.
Dump the batter into a 8"x8" baking pan, lined with parchment paper. Spread the batter evenly in the pan. The batter will be fairly thick.
Bake for approximately 30 minutes.
Remove, and once cooled, cut into desired sized squares.
*Coconut & Friends Trail Mix is a product that I carry that contains walnuts, cashews, pumpkin seeds, and coconut chips.
These are more like a granola bar than a dessert. If you prefer something with a bit more sweetness, just add another couple of dates, or a little bit more maple syrup and you'll still have a pretty healthy dessert to enjoy!
