No-Guilt Chocolate Chip Cookies
low carb, no sugar chocolate chip cookies
Yield: 12 cookies
Materials
- 1 1/4 cups chickpeas (if using canned, drain and rinse)
- 1 cup dates, chopped
- 1/3 cup oat flour (or 1/2 cup oats)
- 1/3 cup milk of choice (I use coconut)
- 2 Tbsp coconut oil
- 1 tsp vanilla extract
- 1 tsp baking powder
- pinch salt
- 1/2 cup chocolate chips of choice
Instructions
- Preheat oven to 175*C
- Place chickpeas and chopped dates into a food processor and process on low until mixed well and everything is in small pieces.
- Add remaining ingredients (except the chocolate chips), and mix until everything is well blended and looks like dough .
- Mix in chocolate chips by hand.
- Divide dough into 12 equal balls and flatten to about 1/2" thick and place on a cookie sheet.
- Bake for approximately 30 minutes. These are a "gooey" cookie so they will not get hard.
- Serve immediately, or store in the refrigerator.
