No-Guilt Chocolate Chip Cookies

Materials

  • 1 1/4 cups chickpeas (if using canned, drain and rinse)
  • 1 cup dates, chopped
  • 1/3 cup oat flour (or 1/2 cup oats)
  • 1/3 cup milk of choice (I use coconut)
  • 2 Tbsp coconut oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • pinch salt
  • 1/2 cup chocolate chips of choice

Instructions

  • Preheat oven to 175*C
  • Place chickpeas and chopped dates into a food processor and process on low until mixed well and everything is in small pieces.
  • Add remaining ingredients (except the chocolate chips), and mix until everything is well blended and looks like dough .
  • Mix in chocolate chips by hand.
  • Divide dough into 12 equal balls and flatten to about 1/2" thick and place on a cookie sheet.
  • Bake for approximately 30 minutes. These are a "gooey" cookie so they will not get hard.
  • Serve immediately, or store in the refrigerator.
