Guiltless Chocolate Pudding

Materials

  • 1 cup milk of choice
  • 3 Tbsp cacao powder
  • 1 Tbsp psyllium husk powder
  • 3 Tbsp maple syrup (more to taste)
  • 1/4 tsp vanilla extract

Instructions

  • Add all ingredients to blender or Nutribullet and mix until well blended.
  • Pour into a container and refrigerate for 30 minutes so that the pudding can 'set'.
  • Serve with whipped cream, plain, or utilize in bowls or other dessert recipes.

Notes

I use 3 tablespoons of the maple syrup. But if you like very sweet, you can add more. 
Honey can be substituted for maple syrup, if desired. 
I use unsweetened soy milk because there is no sugar and it is high in protein. Buy regular milk or any nut milk will work the same. But if using almond milk, beware because of the strong flavor.
