Easiest Slow Cooker Barbacoa Beef
Slow cooked with amazing flavor

Materials
- 2 lbs beef brisket or chuck roast
- 1 large red onion
- 4 cloves garlic
- 1-4 (to taste) chili peppers, canned
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp salt
- juice of one lime
- 1 cup water
Instructions
- Cut beef into large chunks and place in slow cooker.
- Place all other ingredients in a blender or Nutribullet and blend until completely combined.
- Pour mixture over beef.
- Cook for 4-6 hours on low. Watch the water level and add more, if needed. This will depend on your slow cooker and the cut of beef you choose.
- Once cook time is completed, use two forks to separate and shred the meat, and mix with the sauce in the slow cooker. If it seems like there is excess moisture, that is ok; as you shred the beef, it will absorb more of the mixture.
- Serve immediately in tacos, burrito bowls, with chips, over a salad, or even by itself.
Notes
If you don’t want to blend all of the ingredients, you can simply chop them all very small and add to the slow cooker and give a stir a couple of times throughout the cooking duration.
If you don’t like spicy, or prefer a different type of pepper, that is fine; but you may want to increase the smoked paprika slightly in order to still achieve that smokey flavor.
