AlmondBerry Bars
Oatmeal and Almond Flour Base with No Refined Sugar
Yield: 12 bars
Materials
- 1 1/2 cups oat flour
- 1 cup almond flour
- 2 eggs
- 1 tsp almond extract
- 1/4 cup maple syrup (or to taste)
- 1/2 cup mulberries
Instructions
- Prehead over to 190* C
- Mix oatmeal and almond flour in a large mixing bowl until combined.
- Add in egg, almond extract, and maple syrup and mix by hand until well combined and formed into dough.
- Add in mulberries and mix until just combined.
- Divind into 12 equal parts and form in squares, rectangles, or even circles if you prefer.
- Place on a cookie sheet and bake for pproximately 20 minutes. Serve immediately or store in the refrigerator.
Notes
If you don’t like the strong flavor of almond you can substitute vanilla extract in the recipe.
If the squares are hard for you to form, just roll the dough into a ball and slightly flatten it and then place on the cookie sheet. They will still be delicious!!
Chopped dates can be used in lieu of the mulberries in this recipe. But I do prefer the flavor of the mulberries with the almond.
