Oatmeal Date Cookies

Delicious Oatmeal Cookies sweetened with dates

Materials

  • 1 cup oatmeal
  • 1/2 cup coconut flour
  • 1 tbsp mesquite powder
  • 2 eggs
  • 5 huge dates, chopped (about 1/2 cup if not using mine)
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup

Instructions

  • Preheat oven to 350*
  • Remove pits from dates and chop into small pieces and set aside.
  • In medium bowl, mix the oatmeal, coconut powder, and mesquite powder.
  • In a small bowl, mix the eggs, coconut oil, and maple syrup.
  • Pour wet ingredients, into dry and mix until combined well. Once everything is mixed well, add in the dates and mix again.
  • Form into balls and flatten slightly to shape and size desired. Thinner will result in a more dry cookie, and thicker will be more moist and soft.
  • Bake fo approximately 20 minutes on a non-stick cookie sheet with a litte bit of coconut oil.

Notes

If you don’t have maple syrup, or have a preference, honey can be used as well in equal measurements. 
If you do not have mesquite powder, you can substitute with coconut sugar or regular sugar if necessary.
Cooking time will depend on your oven, and the desired “dryness” of your cookies. I prefer my cookies soft, not hard, so I keep the cooking time to a little bit less.
