Preheat oven to 350*
Remove pits from dates and chop into small pieces and set aside.
In medium bowl, mix the oatmeal, coconut powder, and mesquite powder.
In a small bowl, mix the eggs, coconut oil, and maple syrup.
Pour wet ingredients, into dry and mix until combined well. Once everything is mixed well, add in the dates and mix again.
Form into balls and flatten slightly to shape and size desired. Thinner will result in a more dry cookie, and thicker will be more moist and soft.
Bake fo approximately 20 minutes on a non-stick cookie sheet with a litte bit of coconut oil.
