Mango Cobbler, Healthy Style

Healthier Mango Cobbler

Gluten and refined sugar free mango cobbler.

Materials

  • FILLING:
  • 3 cups chopped mango
  • 1/3 cup mesquite powder
  • honey / maple syrup (optional)
  • TOPPING:
  • 4 eggs
  • 1/4 cup mesquite powder
  • 1/4 cup coconut flour
  • 1/4 cup almond flour
  • 1/2 cup coconut oil
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking powder
  • 1/8 tsp salt

Instructions

  • Combine all of the filling ingredients, mix by hand, and pour into a baking dish (I use 8" x 8" glass)
  • In a medium bowl, combine the wet ingredients, mequite powder, and salt.
  • Add the flours and baking powder and combine until the batter is smooth.
  • Spread the battter over the mango in the baking dish.
  • Bake for 30-45 minutes at 375* until the top is brown and a little "crispy".

Notes

 
*You can use any fruit you want. If you’re using apple or peach, adding some cinnamon and/or nutmeg would be delicious. And if you’re using something more tart, you may need to add in extra mesquite powder, honey, or maple syrup to balance the sweetness. 
*I prefer my dessert not overly sweet. But if you have more of a sweet tooth, add some honey or maple syrup to the fruit mixture and/or the topping mixture to give it extra natural sweetness without the refined sugar……OR simply throw some vanilla ice cream or whipped cream on it!
