PHP Sandwich Rolls (LowCarb)
low carb sandwich rolls with psyllium husk powder
Materials
- 1 1/2 cups almond flour
- 5 tbsp psyllium husk powder
- 1 tbsp flaxseed, whole (optional)
- 1 tsp salt
- 2 1/4 tsp baking powder
- 2 tbsp apple cider vinegar
- 2 eggs
- 1 cup water, boiling
Instructions
- Preheat oven to 350* F (175*C).
- Grease baking sheet or line with parchment paper. (I use coconut oil.)
- In medium bowl, add all dry ingredients and mix well.
- Add the vinegar and eggs and mix, by hand, until a very thick dough forms.
- Add boiling water and mix well until everything is combined into a firm dough.
- Divide the dough into four portions. Form each into a ball and then flatten into about 1- 1/12 inch thick "patties" before putting them onto the baking sheet.
- Bake for approximately one hour.
Notes
These rolls are very dense and very filling so, although small, one is plenty!
I have not tried this as a loaf, but it should work also. Just lower the temperature slightly and watch closely to make sure it doesn’t burn.
The flaxseed is optional but I like to add it for the extra nutrition. Chia seeds can be used as well.
If you want smaller rolls, the dough can be divided into as many portions as you prefer. But the smaller they are, the less the cooking time will be, so watch them closely.
