Coconut Oat Waffles
Yield: 4 waffles
Materials
- 1 1/4 cup oat flour
- 2 tbsp coconut flour
- 2 Tbsp Maca Powder*
- 1 tsp baking powder
- pinch of salt
- 2 eggs
- 3/4 cup coconut milk
- 4 tbsp coconut oil
- 1/4 cup shredded coconut
- syrup of choice (optional)
Instructions
- Add flours, baking powder, and salt to a medium bowl and mix.
- In a small bowl combine eggs, coconut milk, and coconut oil.
- Pour wet ingredients into dry and mix well (some small lumps are ok.)
- Once mixed well, add coconut and stir.
- Cook in waffle iron.
Notes
*I love the taste of Maca Powder and utilize it the most often in this recipe. But I also really love the Mesquite Powder with waffles as well as it adds a little bit of sweetness. I’ve also used Wheatgrass, Black Currant, and Lucuma as well. Really any superfood powder should work to give this recipe an added nutrient boost!
