Coconut Oat Waffles

Coconut Oat Waffles

Course: Breakfast
Yield: 4 waffles

Materials

  • 1 1/4 cup oat flour
  • 2 tbsp coconut flour
  • 2 Tbsp Maca Powder*
  • 1 tsp baking powder
  • pinch of salt
  • 2 eggs
  • 3/4 cup coconut milk
  • 4 tbsp coconut oil
  • 1/4 cup shredded coconut
  • syrup of choice (optional)

Instructions

  • Add flours, baking powder, and salt to a medium bowl and mix.
  • In a small bowl combine eggs, coconut milk, and coconut oil.
  • Pour wet ingredients into dry and mix well (some small lumps are ok.)
  • Once mixed well, add coconut and stir.
  • Cook in waffle iron.

Notes

*I love the taste of Maca Powder and utilize it the most often in this recipe. But I also really love the Mesquite Powder with waffles as well as it adds a little bit of sweetness. I’ve also used Wheatgrass, Black Currant, and Lucuma as well. Really any superfood powder should work to give this recipe an added nutrient boost!
