Not Your Normal Brownies
Healthy and Delicious Brownies
Yield: 9
Materials
- 1 1/2 cups black beans
- 3 eggs
- 1 tsp vanilla extract
- 1/4 cup maple syrup
- 3 1/2 tbsp coconut oil
- 1/2 cup mesquite powder
- 1/4 cup cacao powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup cacao nibs
- 1/4 cup chocolate chips
Instructions
- Preheat oven to 175* C.
- Puree beans and eggs in a food processor (some small chunks are fine).
- Pour bean mixture into a large bowl and add the coconut oil, maple syrup, and vanilla and mix well.
- In a separate medium bowl mix the cacao powder, mesquite powder, baking powder, and salt.
- Pour the dry mixture into the bean mixture and mix well, by hand.
- Add in the chocolate chips and cacao nibs and stir until mixed evenly.
- Pour mixture into a prepared 8"x8" baking dish; greased and lined with parchmant paper, if preferred.
- Bake for 30-45 minutes depending how gooey you want them to be.
- Remove from the oven and wait for them to cool until cutting and removing from the pan.
Notes
I use 1/2 chocolate chips and 1/4 cacao nibs but you can use all of either type. The chocolate chips will give it a bit of a sweeter taste than the cacao. I like the blend of both to keep them from being overly sweet.
If you want these to be really gooey, the cook time will be closer to 30 minutes. Just watch them closely as ovens are all different.
If you don’t use parchment paper, prepare to lose one brownie while cutting it out before being able to remove the others. Even with a greased pan, they do stick a little bit. So, if you don’t have parchment paper, you may lose the first one; but then you can use a fork and slid it along the bottom of each subsequent brownie to remove it from the bottom of the pan (expat problems with no parchment paper ;)).
