Add all ingredients, except coconut oil, into high power food processor.
Turn on low and let mix well for about 30 seconds, or until everything is broken down and there are no big pieces left.
If the "dough" looks dry, put the top back on, turn on, and slowly add the coconut oil until all the ingredients are stuck together into a ball. Depending on the moisture in your avocado, you may or may not have to do this step. Some avocados will have enough moisture that they don't need the coconut oil and the dough will stick together in step 2.
Once the dough is sticking all together, divide into 12 equal parts and roll into balls with your hands.
If desired, you can roll the balls in crushed trail mix (separately broken down in the food processor), or cacao powder. If not, simply enjoy as is. Store in the refrigerator. After being refrigerated they will become a little more firm.
