Slice pork into 1/2" x 2" pieces (or larger/smaller based on preference), and sprinkle with salt.
Sautee over medium heat with 1 tbsp of the sesame oil. Drain any excess water and set aside.
In the same medium size pan or pot, add remaining sesame oil and sautee the ginger and garlic on medium heat for one minute until fragrant.
In a small bowl or cup, mix honey, sriracha, and apple cider vinegar. Add it the ginger and garlic once it's fragrant. Continue to cook on medium heat until it's bubbly and slightly thickened.
Add reserved pork to the pan. Stir to coat all of the meat. Continue to cook, periodically stirring, until moisture is reduced and sauce is sticking to the meat (approximately 10 minutes).
Serve with steamed broccoli and parboiled or brown rice for a complete and healhty meal!
