Single Serve Banana Pancake

banana

oatmeal

cinnamon (optional)
oil/butter (for pan)
Instructions
In a small bowl, mash 1/2 of the banana. Reserve other 1/2 whole.
Add egg and oatmeal and mix well.
Allow mixture to sit for two minutes so that the oatmeal can absorb some moisture.
If not using a non-stick pan, add oil or butter to pan and turn on low heat.
Add pancake mixture and cook 2-3 minutes on each side.
Remove panckake from pan and, using reminaing 1/2 banana, top with banana slices.
