No-Guilt Chocolate Chip Cookies

- 1 1/4 cups chickpeas (if using canned, drain and rinse)
- 1 cup dates, chopped
- 1/3 cup oat flour (or 1/2 cup oats)
- 1/3 cup milk of choice (I use coconut)
- 2 Tbsp coconut oil
- 1 tsp vanilla extract
- 1 tsp baking powder
- pinch salt
- 1/2 cup chocolate chips of choice
Preheat oven to 175*C
Place chickpeas and chopped dates into a food processor and process on low until mixed well and everything is in small pieces.
Add remaining ingredients (except the chocolate chips), and mix until everything is well blended and looks like dough .
Mix in chocolate chips by hand.
Divide dough into 12 equal balls and flatten to about 1/2" thick and place on a cookie sheet.
Bake for approximately 30 minutes. These are a "gooey" cookie so they will not get hard.
Serve immediately, or store in the refrigerator.
