Lavender Lime Confections
lightly lavender flavored almond flour cookies

Yield: 12 cookies
- 1 1/2 cups almond flour
- 1 tsp lavender flowers, finely chopped
- 1/4 tsp baking soda
- 1/8 tsp salt
- 2 1/2 Tbsp coconut oil
- 1 Tbsp lime juice
- 1 Tbsp lime zest
Mix all dry ingredients in a medium bowl.
Mix all wet ingredients in a small bowl.
Pour the wet ingredients into the dry and stir, by hand, until combined thoroughly and a dough forms.
Divide dough into 12 equal pieces and form into round balls and then flatten to desired thickness.
Place on a prepared cookie sheet, or parchment paper, and bake at 175*C for 15-20 minutes depending on how firm you prefer your cookies.
Serve chilled or at room temperature.
These cookies can be made very thin and will come out more crunchy if you prefer. Or, if you like a softer, chewy cookie, simply form them a bit thicker before placing them in the oven.
I prefer these served chilled so I keep them in the refrigerator. I do not like them warm, as I do most other cookies.
